Fat Head Dough | Grain Free, Keto Pizza!

Y’all know I’ve been on a pretty strict mission to be grain-free (I feel so, so much better!!) and trying (keyword: try) to incorporate more keto principles into my daily diet. Well one of the things I have missed most is PIZZA! It’s sooo easy once you get the hang of it. Feel free to experiment a little and find the ratios that work well for you. But this recipe has worked perfectly for me every single time.

FAT HEAD PIZZA DOUGH

Ingredients:

1 1/2 cups Mozzarella (shredded)

2 tablespoons Cream Cheese

2 eggs

1/3 cup Coconut Flour

 

Directions:

Preheat oven to 425* F

Combine the shredded mozzarella with cream cheese and microwave for about 60 seconds. Check halfway through and mix it. The goal is to get a soft consistency so they mix well.

Stir in beaten eggs and coconut flour.

Knead with your hands until a dough forms. You may have to microwave again if it becomes too hard.

Spread the dough over a baking sheet lined with parchment paper. I suggest using two sheets of parchment paper and a rolling pin to spread the dough.

Use a fork to poke lots of holes through the dough before baking.

Bake for 7 – 10 minutes. Remove poke more holes where there are bubbles. Bake for 5 – 7 more minutes.

That’s It! Top with your favorite ingredients and pop back into the oven to melt cheese if you’re using it / help the ingredients get yummy and gooey!

 

Notes:

I never purchase pre-shredded cheese because there are so many additives! Buy a block of mozzarella and shred it yourself – I know it take a little extra elbow grease but it’s worth it. When kneading, you may wish to throw the dough again your counter — sounds funny, but that’s my mom’s trick and it helps incorporate everything! Make sure you use a silicon baking sheet and PARCHMENT PAPER! Do NOT use foil. The dough will stick! Not that I know from experience or anything 😉

I added mushrooms, ham, tomatoes and fresh mozzarella on my pizza. I sautéed the mushrooms, ham and tomatoes for a bit before adding them to the pizza. That helps to release the natural liquid so it doesn’t make my pizza soggy! Top with fresh basil and ENJOY!
